RECIPE – Mediterranean style Eggplant Spread, Flounder, and Kale Salad

I am definitely not a chef, or a food blogger, but I LOVE to eat, and enjoy making pretty, healthy meals – and I RARELY use recipes. I just like to cook and eat what I am in the mood for. From 2018 – 2019, by husband and I each lost 50 pounds my meal planning and eating vegetable based diets and staying very active. However, we have each gained nearly all the weight back in the last 2 years with our move and life style changes. So, we are working to try and get our healthy habits back.

One thing I have recently been doing to make sure we are stocked up on healthy foods to cook with is ordering our produce from Misfits market. I know this sounds like a sales pitch, but all the produce is organic and most of it is cheaper than Aldi, which is a 30 minute drive each way, and they have meat and pantry items too. It is hard to argue with fresh food being delivered to your door, especially when it is organic and affordable! Okay, so back to my Mediterranean inspired meal. This dinner was one of my favorites in a long time! Here is what you need – All the produces was Misfits: 1C red sweet pepper, 1 red medium onion, 3 garlic cloves, 1 bunch purple kale, and 1/4C graded carrot. Other ingredients: We used frozen flounder (thawed and patted dry with clean paper towels) and fresh French bread (sliced and toasted with a little sprayed on olive oil and garlic powder), grated parmesan, wheat germ (or your favorite breading), olive oil, 1Tbs tomato paste, 1Tbs apple cider vinegar, lemon juice (about 1/2 lemon), 1tsp stevia (or your favorite sweetener for the kale salad), sea salt, black pepper.
